Peas and Mushroom Curry

Ingredients

  • 1 cup button mushrooms chopped
  • 1 cup shelled and half boiled green peas
  • 3 medium desi tomatoes chopped
  • 1 finely chopped onion
  • 1 finely chopped green chilli
  • 1 tsp. ginger garlic paste
  • 1 tsp. red chilli powder
  • 1 tsp. coriander powder
  • 1/2 tsp. turmeric
  • 11/2 tsp. Garam masala
  • Salt to taste
  • Chopped coriander leaves and lime juice for garnishing (optional)
  • 2-3 tsp. oil for frying

Method

  • Heat oil in a pan
  • Sauté the onions, add ginger-garlic paste, green chilli and sauté further
  • Add tomatoes and sauté till tomatoes turn soft
  • Add turmeric, chilli powder, coriander powder, turmeric and stir
  • Add peas and mushrooms, salt and water and cook
  • Add water if too dry or cook further till extra water dries.
  • Switch off the flame and add garam masala
  • Garnish with coriander leaves and sprinkle lime juice(optional)
  • Serve hot with Phulkas or rotis.

1 cup of mushrooms has 30-40 calories and one cup of peas has 70 calories. Food cooked in non-stick pans use less oil, reducing the total amount of calories consumed. Tasty and healthy. Good for a sugar patient diet.

MUSHROOM SALAD- simple, healthy,  easy

Ingredients

  • Celery
  • Lettuce
  • Cherry tomatoes
  • Mushrooms (slightly cooked or boiled)
  • Green/red/yellow peppers
  • Spring onions
  • 2 tbsp. vinegar
  • Salt to taste
  • Pepper to taste
  • Oregano to taste
  • 1 tbsp. olive oil.
  • ½ tsp. mustard powder

Method

  • In a bowl mix salt, pepper, mustard powder, and vinegar to make the dressing
  • In a larger bowl mix all the chopped vegetables
  • Add dressing and toss
  • Serve immediately

Ingredients

  • 2 eggs
  • 6-8 mushrooms
  • ½ tsp. ginger garlic paste
  • ¼ tsp. turmeric

  • ¼ tsp. red chilli powder
  • 1-2 tbsp. olive oil

Method

  • Heat a non-stick frying pan
  • Saute onions, mushrooms
  • Add salt, ginger garlic paste, turmeric, chilli powder and sauté
  • Set aside when done
  • Whisk the eggs till fluffy
  • Heat the same pan
  • Add a little olive oil
  • Pour the whisked eggs into the pan
  • When a little done add the mushrooms mix on one half of the omelette
  • Cover with the other half. Cook for a minute on slow flame
  • Flip and cook again for a minute
  • Serve hot

CREAM of MUSHROOM SOUP-healthy and sumptuous

Ingredients

  • 2 cups chopped mushrooms
  • ¼ cup chopped onions
  • 5-6 tbsp. maida or corn flour
  • 2 cups stock (chicken or vegetable)
  • Salt to taste
  • Pepper to taste
  • I/2 cup low fat cream (optional)
  • 2 tbsp. butter substitute or oil

Method

  • Heat butter substitute or oil in a pan
  • On medium heat all mushrooms and onions till cooked
  • Add maida /cornflour, salt and pepper and stock and bring to boil
  • (ensure maida does not get lumpy)
  • Slowly fold in the low fat cream
  • Simmer for a few minutes
  • Serve hot

Using butter substitute reduces calories. Low fat cream also is low on calories and high on taste. Mushrooms (60 calories) add to the nutritional value. Ideal for weight loss, sugar control and convalescents. This is a must on a diabetes diet menu.

  • 1 cup chopped mushrooms
  • 1 cup paneer cubes

  • 1-2 tsp. olive oil

Method

  • Heat oil in a non-stick pan
  • Add chopped spring onions and sauté
  • Add mushrooms and sauté
  • And capsicum and sauté
  • Add paneer and sauté
  • Add garlic paste and sauté
  • Switch off flame
  • Add salt, pepper and lime juice and toss

Paneer has only 265 calories per 100 grams. Garlic and lime juice have many health benefits. With low calorie content, mushrooms have become an integral part of diet plan for diabetic patient.
