This is an abbreviation for advanced glycosylation end products. These are produced in the body by natural process of aging and excessively in the bodies of diabetics. While glycation is a non-enzymatic reaction between glucose, lipids, and proteins, glycosylation is an enzymatic reaction. AGEs are formed when proteins and fats react with sugars. Advanced glycosylated end products are formed in a complex molecular process that involves sugars reacting with amino acids forming a ketoamines. The formation of AGEs can impact the health of a person adversely and it affects the metabolism leading to many diseases like kidney disease, high blood pressure, arthritis, and heart disease. Foods that are grilled, barbequed, exposed to high temperatures and foods that contain red meat, cheese, mayonnaise, margarine, and oils, fried foods and processed foods contain high amounts of AGEs.
